Oatmeal Banana Cookies
Ingredients:
- 2 ripe bananas
- 1 cup rolled oats
- 1/4 cup almond butter
- 1/4 cup honey
- 1/4 cup raisins
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Pinch of salt
- Optional: Chocolate chips or chopped nuts
Directions:
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- In a large bowl, mash the bananas with a fork until they are smooth.
- Add the oats, almond butter, honey, raisins, vanilla extract, cinnamon, and salt to the bowl with the bananas. Stir everything together until well combined.
- Use a spoon or cookie scoop to drop the dough onto the prepared baking sheet, spacing the cookies about 2 inches apart.
- Bake the cookies for 12 to 15 minutes or until they are lightly golden brown on the bottom.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
